These Almond Butter Oatmeal Balls are so perfect and so easy to make (almost too easy…), which is great when you’re crunched for time (life of a college-aged blogger…). Perfect anytime of day and for any occasion! And did I mention that they’re healthy? Vegan (I used dairy-free chocolate chips), gluten-free, high fiber and a great source of healthy fats! Not too shabby.

Almond Butter Oatmeal Balls (Recipe)
- 3/4 cup instant oats
- 1/2 cup nut butter (I used almond)
- 2 tbsp. stevia
- 1 tsp vanilla extract
- Chocolate chips (mini chips work well…)
Mix everything in a bowl and shape into balls (Like I said… too easy). Yum!
Note: You may have to toy around with the ingredients until you reach a desired sweetness and consistency.
